Canning

With the large amounts of veggies harvested in 2011 and not having the farmstand yet, I decided to start canning. The canning season's inventory tallied a total of 108 jars! This included jars of bread & butter pickles, dill pickles, sweet pickle relish, pickled cauliflower, pickled jalapenos, pickled hot portugal peppers, garden salsa, whole tomatoes, and strawberry rhubarb preserves. The canned goods were a huge hit at the Staples fair and don't worry folks, there will be plenty to go around again this year. :) Elaine
